Homestyle Chicken Noodle Soup- so easy a monkey could do it!! :)

Well, I'm not normally one to post recipes on my blog, but this recipe has become such a staple at our house, I figured I just had to share! My boys LOVE this tasty soup, and it is so easy to make. Seriously, a monkey could make it! :) Also, it costs less than $10.00 to make a big ol' pot of it!

Homestyle Chicken Noodle Soup (in less than 30 minutes!)

Ingredients:
1/2 of medium onion, chopped
1 bag of egg noodles (you can use either medium or wide)
2 cans of cooked chunk chicken breast (I like the Tyson brand), strained
1 can of sliced carrots, strained
Water
Chicken Bouillon cubes
Parsley Flakes

Easy steps to homestyle, tasty goodness:
1) In a large soup pot, saute onion in olive oil until translucent.
2) Fill pot 2/3 full with hot water and add bouillon cubes (I usually use 3 or 4)- you could also use canned chicken broth.
3) Bring to a rolling boil and add bag of egg noodles.
4) Boil until noodles are tender (approx. 12-15 minutes), and stir occasionally.
5) Add carrots and chicken and reduce heat to low. Simmer for 10 more minutes. (I usually do a quick taste test here and add more seasoning if it needs it.)
6) Sprinkle parsley flakes on top and serve!!! (Don't skip out on the parsley flakes- it really adds to the "homestyle" look of the soup. I am discovering that you can put parsley flakes on an old tennis shoe and it will look appetizing! haha)





You gotta admit it looks yummy!

Enzo likes the chicken best!


And Mommy loves that it's quick and cheap to make!! :)

  2. Mine is similiar...but I add celery. Can't go wrong adding celery to chicken soup. Yummy! Thanks for the share.....I never added onion til tonight. :)

  6. just made this as a get well soup and it was delicious. I've been using canned chicken for dips and appetizers but I've never tried it in a soup until this recipe. I added a little garlic and onion power instead of an onion, also lemon pepper

  9. one bouillon cube makes one cup of broth so that would be 4 cups of broth. I am making this tonight. Hope it is as good as it looks.

  10. I use boxed chicken stock and I buy a whole roasted chicken from the deli! - always have leftover chicken for other recipes....

  11. I loved it. Thanks for sharing! Instead of 2/3 of a pot of water, I used 1/3 water and 1/3 chicken broth (32 oz. Box). I also added 2 tubs of Knoll's concentrated chicken stock. Liquid to solid ratio was spot on!

  13. I'm sorry, ma'am, but do you have children? Eighteen-month old children don't generally contain food to their plates... that's why high chair trays are made to be removable so that they can be easy cleaned between feedings. This has got to be the weirdest, most ignorant comment I've ever received on my blog.

  14. HaHa...had to laugh at "made with love"'s comment. Clearly she doesn't have kids. If she did, she would know that food on a plate to a toddler quickly becomes a game of FRISBEE!

  17. Can I cook my own chicken instead of using can, would I need to add anything extra?

Sorry it took me 7 months to answer your question! :) but just in case you decide to make this soup now that the weather is cooler, I wanted to let you know that I have made it with my own chicken before. I've even shredded a rotisserie chicken and thrown that in the pot before. I usually just boil the chicken breasts (I prefer white meat) in water with a couple cubes of chicken bullion. Once it's cooked, just shred and add to your soup. I hope you have enjoyed the recipe! Again, so sorry for the delayed response! I'm not a regular blogger. :)

  18. OK, even though its almost 100 degrees today here in TX, I made this for lunch today. I made a couple of changes, used a baked chicken breast left over from dinner(no skin), I steamed 2 carrots because I didn't have canned & used one small box of reduced sodium chicken broth along w/3 tsp of chicken granules (didn't have cubes). I also only used 1/2 bag of No Yolks noodles. Followed the cooking instructions and it was fast, simple, cheap and so satisfying. Adding this to my fave board!

  19. Do you know the ounces on the bag of egg noodles you use? And also do you mean frozen or dry noodles? Thanks in advance I'm a very begineer cook!!

    1. I am so sorry I never answered your question! I just grab the bag of egg noodles at the grocery store- I think they're all the same size. And I do use the dry egg noodles.. They're usually in the pasta aisle. I hope that you had a chance to make it and that it turned out OK! :)
